Yes, you read that right, a healthy cinnamon toast crunch breakfast cereal to add to your list of favorites.
Ashley Grimmel, our Nutritionist and Health Educator here at An Oasis Of Healing has done it again having successfully developed a raw, vegan, low carb (ketogenic diet friendly) cinnamon toast crunch breakfast recipe! It is delicious and better yet its easy enough to be made on a tv tray table!
Cinnamon Toast Crunch Breakfast Cereal Ingredients
1 cup unsweetened shredded coconut
1/2 cup raw soaked sunflower seeds
1 tablespoon ground cinnamon
1/4 teaspoon sea salt
1/4 Cup non gmo erythritol powder (I prefer Swerve brand) or 10 drops of stevia (to taste)
1/2 Cup freshly ground flaxseed
1 Cups water (add more if mixture is still too thick)
1/2 teaspoon coconut oil
Place the shredded coconut and sunflower seeds in a food processor and grind for 30 seconds.
Add the cinnamon, salt, stevia, flax and coconut oil and pulse until combined, about 2 minutes. Add water slowly and continue to pulse until mixture begins to thicken in to a spreadable dough.
Scoop the mixture onto a teflex sheet
With a “pastry cutter” spread and flatten the mixture to about 1/4-inch thick. Score into 1 inch squares. Sprinkle some additional cinnamon on top for texture and color. Dehydrate for 8 hours or until crisp. Flipping half way if you wish. Store in an airtight container. If cereal becomes soft from humidity place back in the dehydrator.
Serve as a snack or top with fresh nut milk or coconut milk, enjoy!
